So I made this pumpkin spice cake two weeks ago and I ate half of the cake in the first two days. You know when something is so good, but not so good for that butt in your jeans ... and you just stand at the counter and slowly cut thin slivers off the side? Like the slivers of cake really don't amount to anything? Sometimes I don't even incorporate it into what I ate for the day. It's like I skip right over it. Free calories. Yeah, well let me tell you something, all 462 slivers count. I know. Totally sucks. So this is what you should do. Make this super delicious pumpkin spice cake but just do yourself a favor and cut the cake in half and grab yourself a fork, then slip into your most comfy pajamas and turn on an episode of I Love Lucy. Same calories - so much more enjoyable. 

Pumpkin Spice Cake


Ingredients for Cake
2 cups white sugar
1 1/4 cups vegetable oil
2 cups canned pumpkin
2 cups all-purpose flour
4 eggs
1 teaspoon vanilla extract
3 teaspoons baking powder
2 teaspoons baking soda
1 teaspoon ground cinnamon
1 teaspoon pumpkin pie spice
1/4 teaspoon salt

Ingredients for Cream Cheese Frosting

2 (8 oz) packages cream cheese, softened
1/2 cup butter, softened
2 cups confectioners' sugar
1 teaspoon vanilla extract

Directions
1. Preheat oven to 350 degrees F and grease a 12" x 18" inch pan.
2. Sift together the flour, baking powder, baking soda, cinnamon, pumpkin pie spice, and salt. Set aside.
3. In a large bowl combine sugar and oil. Using a mixer, blend in vanilla and pumpkin, then beat in eggs one at a time.
4. Gradually beat in flour mixture and pour batter into prepared pan.
5. Bake in oven for 30 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.
6. Prepare cream cheese frosting by mixing all ingredients until smooth. Spread on cake and serve.
