Mini Low-Fat Sweet Potato Pies

These mini sweet potato pies are perfect for Thanksgiving. I came up with this low-fat version but by all means add all the egg yolks and whole milk and the recipe will just be that much better : )

Low-Fat Mini Sweet Potato Pies

2 cups mashed sweet potato (approx. 3 large sweet potatoes) 
1 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp salt
1 tsp vanilla
1/4 cup butter room temp
2 eggs
1/4 tsp salt
2 eggs, 3 egg whites
1 cup low fat milk (or whole milk if you want it to be thicker)
1 1/4 cups sugar
Mini Marshmallows
1. Preheat your oven to 350 degrees.

2. Wash your 3 large sweet potatoes and while damp wrap in foil and bake your sweet potatoes for 1 hr until fork tender. Remove skin and mash in bowl. You will only need 2 cups of this.
3.  Combine all ingredients with hand mixer on medium speed for about 2 minutes or until not lumpy.

4.  Pour batter in muffin tins lined with paper liners. Bake in oven for 20 minutes.

5. Turn oven to broil. Immediately place mini marshmallows all over the tops of the sweet potato pies  and place in oven under broiler for 30 seconds until tops of marshmallows are golden brown. This literally takes 30 seconds so watch carefully or they will all burn!

Is it 2 complete eggs and an extra egg white, or is it 2 complete eggs and an additional 3 egg whites?
