How to Make Donut Pancakes

This past weekend we woke up really early and made donut pancakes. I had made some donut pancakes earlier in the week for the blog, but Lily wanted to make her own. Lily wanted to create a recipe and write down all the ingredients on her notepad like we were making a cook book. She wrote every ingredient down and then drew a picture of which ingredient was going into the recipe. She always helps me cook and she was so excited to get to write the recipe this time. We were laughing and listening to music and acting like wild animals while we made pancakes. It's these moments that I wish I could just bottle and have forever and ever. After we ate, we played chalk monster and we drew circles all over the driveway and whoever stepped out would be eaten by the mama monster. They literally laughed for two hours straight until we were melting from the heat and had to come in. As soon as we stepped inside the house, I was asked, "Ok, what now?" I told them we had to organize the playroom for a bit and we could pretend we were workers and we had to get rid of toys, and they were all about it. Olive was in there tossing everything (Lily not so much) and we made a game of it. That's what's so funny about kids. They really like to do anything, whether it's cooking, playing, or even cleaning. They just want one on one attention. When you put your phone away and give them true, honest attention, they are the happiest. Needless to say we had a very happy weekend. 

These donut pancakes are pretty happy too : )

Donut Pancakes
Ingredients for Pancakes
1 1/2 cups all-purpose flour
3 1/2 teaspo
ons baking powder
1 teaspoon salt
1 tablespoon white sugar
1 1/4 cups milk
1 egg
3 tablespoons butter, melted
Chocolate Ganache Ingredients
8oz semisweet chocolate
1/2 Heavy cream
1. In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter; mix until smooth.
2. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides. Set on a cutting board.
3. Using your donut cookie cutter, cut all of your pancakes. If you donut cookie cutter, use a circle, then flip over a shot glass or use a smaller circle to cut the hole in the center. 
4. In a small microwaveable bowl melt the chocolate and heavy cream at 30 second intervals, stirring in between, until completely melted. 
5. Pour over donut pancake stacks and sprinkle with sprinkles.
TIP: If you have a non-stick pan, this works great for perfectly brown pancakes. (No oil needed) You can also use store bought pancake mix.
