Dbl Chocolate Pomegranate Brownies

The pomegranates I picked today ....... so delicious.

The brownies we decided to make with the pomegranates ..... yum.

Double Chocolate Pomegranate Brownies


  • 6 ounces good quality bittersweet chocolate, plus 6 ounces of milk chocolate chips
  • 3 tablespoons butter
  • 3/4 cup granulated sugar
  • 3 1/2 tablespoons water
  • 2 eggs
  • 3/4 cup flour
  • 3/4 teaspoon salt
  • 1/2 cup pomegranate seeds
  • 2 cups walnuts, coarsely chopped (optional)


Preheat oven to 325 degrees F.

In a medium saucepan, combine 6 ounces bittersweet chocolate with butter, sugar, and water. Cook over low heat, stirring, until melted. Set aside to cool a bit. Whisk in eggs, flour, and salt. Stir in milk chocolate chips and pomegranate seeds. Add walnuts if desired. Batter will be thick and lumpy. Spray a 9-inch square pan with non-stick spray and scrape batter into pan. Bake for 30 to 35 minutes. Set on rack to cool. Cut and Enjoy! (Note: The pomegranate seeds give the brownie a "bite" so if you don't have actual seeds you can prepare a POM Syrup. Use 1 cup of POM Wonderful 100% Pomegranate Juice and combine it with 3/4 cup of sugar in a small saucepan; bring to a boil. Reduce heat and simmer about 20 minutes until reduced to 1/2 cup, stirring frequently. Replace the water portion of this recipe with the POM syrup.

 If you don't have a pomegranate tree and want to plant one here are a couple important facts:

- Pomegranate trees are typically planted in medium to heavy soil, but can survive well in sandy soil as well
- The key to a good pomegranate tree is to have excellent irrigation and ample drainage in the soil.
- The trees are pruned during the winter to achieve the proper shape for growing the most fruit possible on every tree.
