Chocolate Holiday Bark

12 oz Semi-sweet chocolate
12 oz White chocolate
Fancy Sprinkles

1. Prepare a half sized cookie sheet by covering it with parchment paper or smooth aluminum foil.

2. Temper the semi-sweet chocolate and pour the chocolate onto the prepared cookie sheet. Use an offset spatula to spread it to an even thickness, a little more than 1/8" thick. The chocolate does not have to reach all sides of the sheet, as it will be broken up later. Place the tray in the refrigerator to firm up very breifly while you prepare the white chocolate.

4. Temper the white chocolate. Remove the semi-sweet chocolate from the refrigerator and spread the white chocolate in an even layer over the semi-sweet chocolate. If you left your semi-sweet chocolate in the fridge for too long and it's extremely cold you will need to let it come to room temp, otherwise the white chocolate will harden as soon as it touches the semi-sweet chocolate and it will be difficult to get the sprinkles to adhere.

6. While the white chocolate is still wet, sprinkle the fancy sprinkles all over the chocolate. You need to work fast so they all embed into the chocolate. Press down very slightly to ensure they stick. Place the tray back in the refrigerator to firm up for 30 minutes.

7. Once the bark is completely set, break into small, uneven pieces by hand or with a knife.
