Apple Slice Banana Oatmeal Pancakes
What you need
1/2 cup Krusteaz Pancake mix
1/4 cup of 1 minute oats
1 cup water
1 tsp. cinnamon
1 banana (ripe)
1 large apple
1. Add all of your ingredients together (except the apple) in a large bowl and use a fork to mash the banana until there are no more chunks. A ripe, almost brown banana, works very well for this because it adds a sweetness to the pancakes and keeps them very moist. You want a thicker batter to coat the apples. If your batter is too thin add a tbs more of pancake mix.
2. Wash your apple and turn it on its side and slice thin 1/4" circles.The thinner the slices the better the pancakes cook. Pat the slice dry with a papertowel and use a metal shotglass or a cookie cutter to cut out the center of each apple slice. Set aside.
3. Heat a non-stick skillet over medium heat for two minutes before placing pancake apple slices into the pan. Carefully dip each apple slice into the batter several times until the slice is completely coated. It works well to use a bowl full of batter and hold each apple in the batter, right next to your frying pan, then imediately stick the pancake apple slice from the bowl into the pan so you get the most mixture on each slice. When bubbles come to the top of the pancake and almost all of the bubbles pop, it is time to flip the pancake. Cook for one more minute, until other side is brown, before transferring to a plate. Serve with syrup or honey.
TIP: Never grease your pan or griddle when making pancakes. Always uses a dry non-stick pan for perfectly brown pancakes.
